No-Name Chili
- 1/4 lb finely chopped suet OR 3-4 T cooking oil
- 6 lbs lean beef cut into 1/2" cubes
- 1 c chili powder
- 2T ground cumin
- 2 T ground oregano
- 1 T salt
- 2-4 T cayenne paper
- 4 cloves garlic, minced
- 2 quarts beef broth and/or water
- 1/2 c finely ground cornmeal
- 1/2 c cold water
- If using suet, fry it in a large chili kettle until crisp. Add beef to hot fat, 1 lb at a time, and cook- stirring often until browned. Remove and repeat with remaining beef.
- When everything's browned, return it all to the kettle. Add seasonings and beef broth. Cover. Simmer 1 1/2 - 2 hours. Skim fat if needed.
- Combine cornmeal with cold water and stir into chili. Simmer 30 minutes, stirring occasionally.
- Serve with plenty of ice cold refreshments.
