No-Name Chili

  1. If using suet, fry it in a large chili kettle until crisp. Add beef to hot fat, 1 lb at a time, and cook- stirring often until browned. Remove and repeat with remaining beef.
  2. When everything's browned, return it all to the kettle. Add seasonings and beef broth. Cover. Simmer 1 1/2 - 2 hours. Skim fat if needed.
  3. Combine cornmeal with cold water and stir into chili. Simmer 30 minutes, stirring occasionally.
  4. Serve with plenty of ice cold refreshments.
