Fastest Fudge Cake With Ganache Drizzle

  1. Cake:
  2. With a rack in the lower third of the oven, preheat oven to 350 F. Place a round of parchment in the bottom of an 8x2 or 9x2 round cake pan and then grease it with butter or spray with cooking spray.
  3. In a small bowl, whisk the flour, cocoa, baking soda and salt. In a large bowl, mix the melted butter with the brown sugar using a wooden spoon. Add the eggs and vanilla and stir until combined. Add the flour mixture all at once and mix just until the flour is moistened. Pour the hot water over the batter and stir gently until incorporated. The batter will be smooth.
  4. Transfer the batter to the prepared cake pan and bake until a toothpick inserted in the center comes out clean, about 30 minutes if you use a 9-inch pan or 35-40 minutes if you use an 8-inch pan. Let the cake cool in the pan on a cooling rack for 10 minutes then run a thin knife around the edge of the pan and invert the pan to remove the cake. Remove the parchment (if you used it) and turn the cake right side up to cool completely.
  5. With the cake still on the rack, set it over a baking sheet or a piece of foil or parchment paper to catch the drips. Pour the warm ganache over the cake and use an offset spatula to spread it over the top and down the sides of the cake. Let set for about an hour before serving.

  7. Place the chocolate in a medium heatproof bowl. In a saucepan, bring the cream to a boil. Pour the hot cream over the chocolate and whisk gently until the chocolate is melted and smooth.
