No-Drama French Bread Rolls
- 4 c white flour + more for kneading
- 3 c whole wheat flour
- 2 c tepid water
- 4t salt
- 1c warm water
- 2 scant T yeast (Saf-Instant brand works great)
- Sift flours together in large mixing bowl.
- Dissolve salt in 2c tepid water, yeast in 1c warm.
- Add liquids to flour and stir to blend.
- Turn sticky dough out onto floured surface, knead 3 min.
- Let rest 3 min, knead 1 min to smooth elasticity, return to bowl, cover.
- When risen to double, turn out, flatten dough to remove air bubbles.
- Tuck edges under, return to bowl, cover.
- When risen to double, turn out, cut in fourths.
- Flatten each to oblong, fold lengthwise & press to seal.
- With seal up, flatten again, fold over & seal.
- Seal down, roll like snake to baguette shape.
- Cut into fourths, arrange rolls on greased cookie sheet, let rise a half hour, covered.
- Bake at 400 in top third of oven, 15-20 min or until lightly browned.
