Chocolate Soufflé
- 7 ounces chocolate
- 1/3 cup strong coffee
- 1/3 cup flour
- 2 cups milk
- 3 Tablespoons butter
- pinch salt
- 1 Tablespoon vanilla
- 4 egg yolks
- 6 egg whites
- 1/2 cup sugar
- 1.tutter a 2 - 2 1/2 quart baking dish. Coat with sugar.
- 2.tombine chocolate and coffee in heatproof bowl and melt over double boiler until smooth.
- 3.tisk flour and milk together and boil slowly for 2 minutes, stirring.
- 4.tff the heat, add the butter, salt, vanilla, yolks and chocolate.
- 5.teat egg whites. Gradually add the sugar and beat until stiff shining peaks appear.
- 6.told the whites into the chocolate mixture.
- 7.tour into prepared baking dish and bake until puffed, 30 - 40 minutes.
