Italian Fig Cookies
- Filling:
- 1 lb chopped figs
- 1/2 box raisins
- 1/2 t lemon peel
- 1/2 t orange peel
- 1/2 c chocolate chips
- 1/2 c honey
- 1/2 c orange juice
- Cook together until soft, then pulse in food processor.
- Dough:
- 1 C shortening
- 1 C sugar
- 4 C flour
- 5 t baking powder
- 1 t salt
- 3 beaten eggs
- 1/2 C milk
- 1 t vanilla
- Mix dry ingredients together, then stir in the eggs, milk and vanilla to form a soft dough. Roll into a long, narrow rectangle, spread the filling down the middle and fold over.
- Cut into slices and bake 15 minutes at 425 degrees. Glaze with sugar glaze if desired.
