Lamb Roast
- 1.5 lbs lamb roast
- Mustard coating
- Quarter onion
- 3 garlic minced
- Small handful chopped parsley
- Mustard coating
- 1 large garlic clove
- 1/4 tsp salt
- 1 tbs Dijon-style prepared mustard
- 1/2 tbs soy sauce
- 1/2 tsp ground rosemary, thyme, or oregano
- 1 tbs freshly squeezed lemon juice
- 2 tbs olive oil
- Make mustard coating:
- 1. Mash sliced garlic to a paste with salt
- 2. Whisk in mustard, soy sauce, herbs, lemon juice, and then oil, to make a mayonnaise-like cream.
- Prepare roast:
- 1. Preheat oven to 350F
- 2. Mix chopped onion, minced garlic, and parsley. Stuff them into the roast.
- 3. Smear mustard coating on the roast.
- 4. Put the roast in a baking dish and bake under 350F for about 1 hours
- 5. After roast, remove lamb and rest 15 to 20 minutes before carving.
