Swedish Pancakes

  1. 1.) Crack eggs into a blender. blend on high until lighter (about 30 seconds). add other ingredients one at a time to the eggs, and blend well after each addition.
  2. 2.) Heat a medium-small sized frying pan on medium-low heat. add a bit of butter, canola oil, non-stick spray, etc. on pan and spread it.
  3. 3.) add about 1/4 a cup of batter onto pan, and swirl. if not covered, add a bit more. take a thin plastic spatula and push in the sides. flip once it is lightly golden brown. cook on other side.
  4. 4.) repeat steps 2-3 until batter is gone, and serve with a variety of toppings. fold like a burrito, and eat with a fork.
