Martha'S Sausage Cheddar Quinoa Balls
- 1 cup Quinoa
- 1/2 cup Panko bread crumbs - optional
- 1/2 cup Flour
- 1/2 cup Corn meal - coarse
- 1 1/2 teaspoons Baking powder
- 1/2 teaspoon Cayenne
- 2 cups Shredded cheddar - sharp
- 1 pound Pork breakfast sausage
- 1/2 cup Onion - finely minced
- Cook quinoa in 2 c water uncovered. Do not overcook. Drain water remaining when quinoa tastes done. Let cool.
- Mix together panko, flour, corn meal, baking powder, cayenne in large bowl.
- Add cooled quinoa and shredded cheese to dry ingredients in bowl.
- Add sausage and onion to bowl. Mix by hand. Do not overmix.
- Form into 1" balls. Place balls on parchment paper on baking sheet 1/2" apart.
- Bake 400 F until brown, 25 minutes.
