Maxine'S Sweet Potato Casserole
- Casserole:
- 3 cups mashed sweet potatoes
- 1 stick butter
- 1/2 c granulated sugar
- 1/3 c milk
- 2 eggs
- 1 tsp vanilla
- Topping:
- 1/2 c white flour
- 1 c brown sugar
- 5 tablespooons butter
- 1 c pecans, coarsely choppped
- Peel the sweet potatoes and boil in lightly salted water until tender when pierced with a fork. Drain off the water. Mash the potatoes and check the measure so you have 3 cups or little more when mashed. While the potoes are still hot, add the butter which will melt into the potatoes. Add the remaining casserole ingredients and mix together.
- Spread into buttered 9 x 13 inch pan - pyrex works well. Mix the topping ingredients together, cutting the butter into the mixture which will resemble coarse crumbs and spread topping over the potatoes. Bake at 350 degrees for approximately 45 minutes. Serve warm & is fine made in advance and reheated.
