Stir Fry Shrimp & Tasso
- Nuoc Cham Style Dressing
- 1/4 c rice wine vinegar
- 1/4 c fish sauce
- 1/4 c water
- 1 Tb sugar
- 1 Tb sambal olek
- 1/2 carrot - shredded
- Marinade Ingredients
- 1 # shrimp (as you like them)
- 1/3 # large dice Tasso
- 4 Tb fish sauce
- 1 Tsp sugar
- Main Ingredients
- 2 Tb grapeseed or peanut oil
- 1 small onion, sliced
- 4 cloves garlic, sliced
- 1 Tb red pepper flakes (or actual peppers if you have them on hand)
- 1 diced lemongrass stalk(can use 2 Tb dry if you like)
- 1/2 c or more cut basil or mint
- dressing:
- put ingredients together and mix. Set aside in a small bowl
- marinade:
- mix fish sauce and sugar in a small bowl to combine. Pour over shrimp and tasso in larger bowl. Cover and let marindate for 20-30 mins
- cooking!:
- Heat wok over high heat with oil. When it begins to smoke, put in onion, garlic, and cut for 20 seconds.
- Put in red pepper flakes and lemon grass and cook for about a minute longer until garlic begins to brown.
- Throw in shrimp, tasso and marinade and cook until shrimp is just turning pink everywhere (or should i say cook to taste)
- Toss in basil and mix until wilted.
- Serve over greens, sliced cabbage, rice or just by itself with a piece of crusty bread to soak up the marinade.
