Nutmeg Crusted Low-Fat Banana Bread
- 1 cup sugar
- 1/4 cup butter softened
- 2 egg whites
- 1 2/3 cup mashed ripe bananas (about three medium)
- 1/4 cup skim milk
- 1/4 cup lite sour cream (better brands have no gum thickeners)
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 2 teaspoons sugar
- Preheat oven to 350`
- Cream butter and sugar together then egg whites.
- Mix in mashed bananas, milk, sour cream, and vanilla.
- Stir in flour, soda, and salt until well blended.
- Pour into greased 5"x 9" loaf pan.
- Sprinkle nutmeg evenly over the top of the batter, followed by a thin layer of sugar.
- Bake 60-70 minutes, until toothpick comes out clean.
