Pork Chops W/ Apples
- 4- 8oz pork chops
- 2 apples sliced
- 1 medium onion sliced thin
- 5 garlic cloves diced
- 1/3 cup chicken broth
- 1 cup whipping cream
- 1/4 cup Dijon mustard
- 3 Tbls bourbon
- 8 sprigs of thyme
- 4 Tbls olive oil
- salt and pepper
- Cook chops in skillet with olive oil. Cook on both sides until brown. Remove from skillet.
- Put apples, onions and garlic into skillet. Stir occasionally over med heat until brown. Remove from skillet.
- Add broth to skillet, stirring to loosen bits from bottom of skillet. Whisk cream, mustard into broth.
- Cook until bubbly.
- Add bourbon, chops and turn to coat chops. Add apples, onion, garlic and thyme mixture top of chops.
- Bake at 370 degrees for twenty minutes. Let stand for 5 minutes before serving
