Blueberry Muffins
- 6 Tlbs sweet butter at room temperature
- 1 1/2 c sugar
- 3 eggs
- 2 c white flour
- 1/4 teasp salt
- 2 teasp baking powder
- 1/2 c milk
- 1 teasp vanilla extract
- 2 c blueberries, washed and well drained
- 3 Tbls sugar mixed with 1 teasp cinnamon
- Preheat oven to 375. Grease top& insides of muffinpan In large bowl, cream buter & 1 1/2 c sugar until fluffy
- Add eggs one at a time, mixing well between each
- Add flour, salt, baking powder, alternately with milk to
- the creamed mixture
- Add vanilla
- Crush 1/2 c of the blueberries with a fork & add to batter, stirring by hand
- Add remaining 1 1/2 c of whole berries & stir gently
- Fill muffin tins to top with batter.
- Top each muffin with a sprinkle of cinammon-sugar
- Bake for 30 min. Turn off oven and leave muffins in oven for another 20 minutes and open door(if using electric oven)
