Crab Meat And Vegetable Salad
- 1 1/2 c. uncooked converted rice
- 1 1/2 c. frozen peas
- 2 small scallions, minced
- 1/4 c. milk
- 1 Tbsp. fresh lemon juice
- 1/8 tsp. garlic powder
- 1 pt. cherry tomatoes
- 2 c. imitation crab meat, flaked
- 1 c. carrots, shredded
- 1 c. mayonnaise or salad dressing
- 1/4 Tbsp. pepper
- 1/2 head leaf lettuce
- In a medium-size saucepan, cook rice according to directions; let cool.
- In a large bowl, combine rice, crab meat, peas, carrots and scallions; mix well.
- In a small bowl, combine mayonnaise, milk, lemon juice, pepper and garlic powder; stir.
- Stir this into rice mixture, tossing to coat.
- Chill salad.
- On a platter, arrange bed of lettuce and top with salad.
