Potato And Spinach Layer

  1. Place the potatoes in a saucepan of boiling, lightly salted water and cook for 5 minutes or until just tender.
  2. Drain and leave to cool slightly.
  3. Place the spinach in a saucepan with just the water from the washing and cook for 4 to 5 minutes or until softened.
  4. Drain excess water.
  5. Add nutmeg, seasoning and yogurt. Place half the spinach at the base of a shallow, flameproof dish. Top with a layer of potatoes, using half the potato slices.
  6. Repeat the layers, making sure spinach is completely covered by potatoes. Season the top layer and brush with oil.
  7. Sprinkle with Parmesan cheese and place in a preheated oven at 400u0b0 for 10 to 15 minutes to brown.
  8. Makes 6 servings.
  9. Immediately garnish with fresh herb sprigs.
