Zucchini-Orange Bread

  1. Heat oven to 350u0b0.
  2. Grease and flour bottom only of two 8 x 4 or 9 x 5 loaf pans.
  3. In large bowl, beat eggs until thick and lemon colored.
  4. Add sugar gradually.
  5. Stir in oil, 2/3 cup orange juice and zucchini.
  6. Lightly spoon flour into measuring cup; level off. Stir in remaining bread ingredients; mix well.
  7. Pour batter into prepared pans.
  8. Bake for 45 to 55 minutes or until toothpick inserted in the center comes out clean.
  9. Cool 10 minutes.
  10. Remove from pans; cool slightly in small bowl.
  11. Blend glaze ingredients and spread over warm bread.
