Crispy Southern Fried Chicken

  1. 1. Beat eggs in a bowl until well mixed. Roll chicken in egg batter and set on rack to drain. Do not allow to dry! While the chicken is "draining", add about 1/2 of an inch of vegetable oil to your pan and heat it to 350 degrees F.
  2. 2. Season chicken with seasonings evenly on both sides then dredge in flour. Be sure to completely cover chicken in flour.
  3. 3. Fry at 350 degrees F until bottom is a rich golden brown. Turn (only once) and fry an additional 8-10 minutes or until that side is also a rich golden brown.
  4. 4. Remove from pan and drain on high-quality paper towels (low quality will stick to the chicken).
