Crispy Southern Fried Chicken
- 4 boneless chicken breast halves
- Black Pepper
- Seasoned Meat Tenderizer
- Onion Powder
- Garlic Powder
- Paprika
- Dried Parsley Flakes
- Flour
- 3 Large Eggs
- 1 1/4 cups vegetable oil
- 1. Beat eggs in a bowl until well mixed. Roll chicken in egg batter and set on rack to drain. Do not allow to dry! While the chicken is "draining", add about 1/2 of an inch of vegetable oil to your pan and heat it to 350 degrees F.
- 2. Season chicken with seasonings evenly on both sides then dredge in flour. Be sure to completely cover chicken in flour.
- 3. Fry at 350 degrees F until bottom is a rich golden brown. Turn (only once) and fry an additional 8-10 minutes or until that side is also a rich golden brown.
- 4. Remove from pan and drain on high-quality paper towels (low quality will stick to the chicken).
