Spiced Apple Revel Loaf
- 1 (14 oz.) jar spiced apple rings
- 1/4 c. packed brown sugar
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 4 Tbsp. butter or margarine
- 1 c. granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 2 1/2 c. all-purpose flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 3/4 c. milk
- 1/2 c. chopped walnuts
- Peel apple rings; mash with a fork.
- Add brown sugar, the cinnamon (1/4 teaspoon), nutmeg and ginger.
- Set aside.
- In a large mixer bowl, cream butter and granulated sugar.
- Add eggs and vanilla; beat well.
- Thoroughly stir together the flour, baking powder, salt and 1 teaspoon cinnamon.
- Add alternately to creamed mixture with milk.
- Stir in walnuts.
- Spread one-third of the batter into greased and floured 9 x 5 x 3-inch loaf pan.
- Drop one-third of the apple mixture by tablespoons onto batter.
- Repeat layers to make 3 layers of each, ending with apple mixture.
- Bake in 350u0b0 oven for 1 hour.
- Cool on rack.
- Makes 1 loaf.
