Apple Cranberry Baked Oatmeal
- 3 cups Old-Fashioned Oats (not Quick Oats!)
- 1/2 cup Packed Brown Sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 2 tsp Cinnamon
- 1/2 tsp Ground Cloves
- 1/2 tsp Ground Allspice
- 2 Large Eggs
- 1 1/4 cup Milk
- 3/4 cup Applesauce
- 1/2 tsp Almond Extract
- 3/4 cup Dried Cranberries
- Preheat oven to 350. Grease a muffin tin or 12 ramekins (or use ungreased silicone muffin cups). Combine the oats, brown sugar, baking powder, salt, cinnamon, cloves and allspice in a medium bowl.
- In a large mixing bowl, beat or whisk the eggs, milk, applesauce and almond extract. Gradually add the dry ingredients while continuing to mix. Still in cranberries.
- Pour into muffin cups or ramekins and bake uncovered about 30 minutes or until knife inserted comes out clean. (If you use ramekins, this will take longer).
