Black Bean Soup
- 1 tbsp EVOO
- 1 link spicy chicken sausage
- 1 large onion
- 1 red bell pepper
- 4 cloves garlic
- 1 tsp cumin
- 1/2 tsp oregano
- 2 15 oz cans black beans
- 2 cups chx broth
- 1 canned chipotle, minced
- 1/3 cup sour cream
- 1/2 tsp lime zest
- 4 tsps lime juice
- 1/4 tsp honey (optional)
- salt
- brown sausage, set aside
- saute onion, garlic, cumin and oregano, add red pepper.
- add beans, broth, chipotle and simmer for 5 minutes
- combine sour cream, lime zest, 1 tsp lime juice and honey, set aside.
- Puree soup, add back to pot with sausage, stir in remaining lime juice. Serve with lime sour cream dollop.
