Penne With Vegetables
- 1 8 oz. pasta, cooked & drained
- 1 tbsp. extra virgin olive oil
- 1 med. onion, chopped
- 2 cloves garlic, crushed
- 2 tbsp. butter
- 3 tbsp. flour
- 1 1/2 c. skim milk
- 1 1/2 c. fat free Half & Half
- 1 c. gr. Parmesan
- 2 tsp. dried Ital. seasoning
- Salt, pepper to taste
- 1 14 oz can diced tomatoes, seasoned
- 1 10 oz. pkg. frozen chopped spinach, thawed & drained
- In a small sauce pan, saute onions & garlic in olive oil until browned.
- In large sauce pan, melt butter.
- Add flour & stir.
- Slowly add Half & Half and milk, simmer, stirring constantly till thickened.
- Add cheese & seasonings.
- Stir until cheese melts and add tomatoes, spinach and onion mixture.
- Heat through.
- Pour over warmed pasta toss and serve.
