Simple Meatballs
- 1 lb of ground meat or flaked if working with fish
- 1/2 cup unprepared ground stuffing mix.
- 1 egg if working with meat 2 eggs if working with fish
- 1/4 cup grated cheese of your choice (optional)
- First I would prepare the stuffing mix by placing it in a blender and blending until all pieces resemble crumbs. I usually store excess in a bowl in my spice cupboard.
- Preheat oven to 350 degrees Fahrenheit. Then combine ingredients in bowl. If the meat is cold I would recommend mixing with either a wire potato masher or sturdy pastry cutter (as not to punish your hands unnecessarily). Roll into 1 inch balls place in cake pan and bake for 20 minutes. For larger meatballs increase your cooking time accordingly.
- These meat balls can be prepared with just about any meat imaginable, served atop pasta or in a sandwich. Fish atop pasta is better served with an Alfredo sauce I usually mix the equivalent of one meat ball into the base when preparing this sauce. I call it "Spaghetti and meat balls with a twist". As opposed to Spaghetti and Fish Balls which sounds less appealing.
