Mamma'S Italian Meatloaf
- 1/4 c olive oil
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 1/2 onion, chopped
- 1/2 bunch green onions, chopped
- 1 garlic clove
- 2 eggs
- 1 c canned crushed tomatoes w/juice
- 1 c grated pecorino Romano cheese
- 1 c unseasoned breadcrumbs
- 1 1/2 tsp kosher salt
- 1 tsp black pepper
- 1 tbsp chopped parsley
- 2 lbs ground beef
- 1 cup Pomodoro sauce
- 1) Preheat oven to 400 deg F
- 2)In small saute pan, heat olive oil over medium heat, add bell peppers and onion. Cook, stirring occasionally, for about five minutes or until soft.
- 3) In mixing bowl, combine remaining ingredients except sauce. Add cooled vegetables and mix well. Form a loaf and place in baking dish.
- 4) Place meatloaf in oven and cook for 15-20 minutes, until nice and brown.
- 5) Pour sauce over loaf, cover with foil, reduce temperature to 350 deg F and bake another 30-45 minutes, or until internal thermometer reads 150-160 deg F.
- 6) Let rest for 15-30 minutes.
- Alternative: substitute 1 lb pork for beef
