Mamma'S Italian Meatloaf

  1. 1) Preheat oven to 400 deg F
  2. 2)In small saute pan, heat olive oil over medium heat, add bell peppers and onion. Cook, stirring occasionally, for about five minutes or until soft.
  3. 3) In mixing bowl, combine remaining ingredients except sauce. Add cooled vegetables and mix well. Form a loaf and place in baking dish.
  4. 4) Place meatloaf in oven and cook for 15-20 minutes, until nice and brown.
  5. 5) Pour sauce over loaf, cover with foil, reduce temperature to 350 deg F and bake another 30-45 minutes, or until internal thermometer reads 150-160 deg F.
  6. 6) Let rest for 15-30 minutes.
  7. Alternative: substitute 1 lb pork for beef
