Bbq Salmon Fillets With Honey Mustard Mayonniase
- 6 SALMON FILLETS (PREFERABLY WITH ALL SKIN REMOVED)WASHED AND PATTED DRY.
- JUNIPER BERRY DRY RUB:
- 3 TBSP SUGAR
- 1 1/2 TBSP JUNIPER BERRIES (I BUY THEM AT THE BULK BARN)
- 1 TBSP SEA SALT
- 3/4 TSP WHOLE BLACK PEPPERCORNS
- HONEY MUSTARD MAYONNAISE:
- 1/2 CUP LOW FAT OR REGULAR PREMIUM QUALITY MAYONNAISE.(I USE HELMANNS)
- 1/2 CUP PLAIN YOGOURT
- 3 TBSP HONEY MUSTARD OR RUSSIAN-STYLE MUSTARD
- 1 TBSP LEMON JUICE
- 1 TBSP FRESH CHOPPED DILL, OR TO TASTE
- ON GLASS PLATE, ARRANGE SALMON FILLETS. LIBERALLY SPOON ON THE JUNIPER BERRY DRY RUB. PRESS THE RUB ONTO THE SALMON FILLETS WITH THE BACK OF A SPOON. REPEAT ON THE OTHER SIDE.
- COVER AND REFIGERATE FOR 2 - 3 HOURS. SALMON DOES NOT NEED TO BE MARINATED FOR A LONG TIME.
- FOR HONEY MUSTARD MAYONNAISE... MIX ALL INGREDIENTS IN A BOWL AND REFRIGERATE UNTIL READY TO SERVE.
- PREHEAT BBQ.
- PLACE A PIECE OF TIN FOIL WHICH HAS BEEN OILED, OR SPRAYED WITH OIL, ON TOP OF THE BBQ GRILL. PLACE SALMON FILLETS ONTO THE TIN FOIL. CLOSE BBQ COVER AND BBQ 5 MINUTES AND THEN TURN AND BBQ AN ADDITIONAL 3-4 MINUTES, OR UNTIL READY.
- SERVE IMMEDIATELY WITH HONEY MUSTARD MAYONNAISE ON THE SIDE.
