BradyS Sideline Bbq Nachos
- 2-3 chicken breasts, marinated in lemon pepper marinade, drained and chopped
- 1/2 red bell pepper, diced
- 1/2 yellow pepper, diced
- 1/2 red onion, finely diced
- 1 c. frozen corn, defrosted
- Can of black beans, rinsed, and drained
- 2 c. coarsely grated* pepper jack cheese
- 2 c. coarsely grated* mild cheddar cheese
- 1 1/2 c. your favorite BBQ sauce
- Big bag of yellow corn tortilla chips, or any other hearty variety
- Jar of chunky salsa
- Preheat oven to 350. Bake the chopped chicken breast for 15 minutes, or until done. Place the chicken in a bowl with the BBQ sauce, add more sauce if necessary. Let the chicken and BBQ sauce mingle for awhile. For better flavor, do this step up to 24 hours before Game Day! Line a large rimmed baking sheet with aluminum foil and begin layering your ingredients. Start with a layer of chips, and sprinkle vegetables, chicken, beans and lastly cheese over the chips. Add another layer of chips and repeat with remaining ingredients. Repeat layering until you're satisfied! Bake for 7-10 minutes, keep a close watch. When gooey and melty, remove from oven. Drop spoonfuls of salsa on the nachos. Lift the foil with chips onto a serving platter and enjoy!
- * Do not use fancy shredded cheeses, they bake too quickly and leave you with dried cheese on your chips.
