Albondigas Meatball Soup

  1. 1. Bring water to a boil in a large pot.
  2. 2. Add meatballs, tomato sauce, onion, vinegar, garlic, potatoes, and carrots. Return to a boil.
  3. 3. Mix in bouillon, oregano, & thyme.
  4. 4. Simmer until carrots & potatoes are tender, 20-30 minutes.
  5. 5. Stir in cilantro.
