Albondigas Meatball Soup
- 6 cups water
- 1 lb frozen meatballs, cooked according to package instructions
- 8 oz can tomato sauce
- 1/2 onion, finely chopped
- 1 tsp vinegar
- 1 garlic clove, minced
- 2-3 large potatoes, cut into 1/2 inch cubes
- 1 large carrot, cut diagonally into 1/4 inch slices
- 2 tsp. chicken bouillon granules
- 1 1/2 tsp fresh oregano
- 1 1/2 tsp fresh thyme
- 1/4 cup cilantro, chopped
- 1. Bring water to a boil in a large pot.
- 2. Add meatballs, tomato sauce, onion, vinegar, garlic, potatoes, and carrots. Return to a boil.
- 3. Mix in bouillon, oregano, & thyme.
- 4. Simmer until carrots & potatoes are tender, 20-30 minutes.
- 5. Stir in cilantro.
