Low Carb Cheesy Cucumber Boats
- 1 small "pickling" cucumber, about 4-5" long, cut in half lengthwise and seeds scooped out
- 3 oz whipped cream cheese, softened
- 1 Tablespoon mayonnaise
- 1/4 teaspoon dried basil or dill
- 4 slices turkey bacon, cooked and crumbled
- 1 slice smoked deli turkey, diced finely
- 1 tablespoon pimiento peppers, diced
- 1 tablespoon parmesan cheese, grated
- 1 6" whole wheat or low-carb tortilla
- In a medium bowl, stir together cream cheese, mayonnaise, dill, bacon, diced turkey, pimientos, and paremsan until well mixed. Pipe or spoon into the hollowed out cucumber halves.
- Slice the round edges off the tortilla to make it square. Slice the square diagonally to make two triangles for the "sails."
- Gently "thread" a 4-6" wooden skewer through the long side of each triangle to resemble the "sail" of a boat. Place the skewer through the middle of the cucumber so that it looks like a sailboat.
- Place the boats (laid flat) into a plastic reusable container so that they remain intact.
