Super Moist Chocolate Cake
- Dry Ingredients:
- 2 cups flour
- 2 cups sugar
- 1 tsp baking powder
- 2 tsp baking soda
- 3/4 cup cocoa powder
- 1 tsp salt
- Wet Ingredients:
- 1 cup vegetable oil
- 1 cup milk
- 1 cup of hot "Swiss White Chocolate Coffee" (from General Foods International Coffees, made per directions)
- 1 tsp vanilla
- 2 eggs
- Preheat oven to 350 degrees. Grease two 9 inch cake pans, then dust with cocoa powder, then set aside. Sift the dry ingredients together in a large mixing bowl. Of the wet ingredients, add the oil, milk and coffee to the dry mixture and blend for about 2 minutes. Add the vanilla and the two eggs and blend for 2 more minutes. Pour equal amounts of batter into each cake pan and bake for 25-30 minutes. Test with a toothpick at the 25 minute mark. Let cool completely before frosting with your favorite store bought brand or from-scratch recipe.
