Beef And Provolone Stuffed Peppers
- 8 mini sweet peppers
- 1 tablespoon olive oil
- 4 ounces sirloin steak
- salt and pepper
- 1 cup marinara sauce
- 1 clove garlic minced
- 5 cups water
- 1/3 cup sharp Provolone cheese, shredded
- 4 tablespoons reserved marinara sauce
- Pecorino Romano cheese
- Season steak with salt and pepper. Brown in oil. Add marinara sauce, garlic, and water. Simmer for about 1 1/2 hours or until very tender. Remove from sauce, let cool, then shred meat. Mix beef, Provolone cheese, and 4 tablespoons reserved marinara sauce. Slice peppers in half lengthwise and remove seeds and veins. Stuff peppers with beef mixture. Place on a baking sheet and bake at 400 for 15-20 minutes. Sprinkle with Pecorino Romano cheese. Serves 4.
