Crispy Duck

  1. Bring water, 3 sliced oranges and soy sauce to a boil.
  2. Simmer 20 minutes.
  3. Wash duck and pat dry.
  4. Mix 5 spice powder, salt & pepper and coat inside of duck cavity with mixture.
  5. After liquid has simmered, ladle on to duck, but not inside of cavity.
  6. Set duck on a rack in a shallow dish and leave in the refrigerator for at least 2 or 3 days.
  7. Remove duck from refrigerator. Let stand about 20 minutes.
  8. Cut 1 leftover orange into 4 - 6 sections and stuff into cavity.
  9. Stuff 4 - 6 slices of ginger into cavity.
  10. Bake in 400 degree oven for 2 hours.
  11. Turn up oven to 450 degrees for another 20 - 30 minutes.
  12. Skin should be extremely crispy.
  13. Remove from oven. Let cool. Slice duck thinly, removing from bones.
  14. Wrap in pancakes or tortillas, spread with sauce and scallions, if desired.
