Salmon Patties
- 2 cans of pink alaskan salmon, boned and drained
- 1/2 cup crushed crackers
- 2 med eggs
- 1/2 tsp. salt
- 1/2 tsp. dill weed, crushed
- 1/4 tsp. pepper
- 6 thin lemon wedges
- In a 10-inch skillet, pour approx. 1/2 inch of oil and heat to frying temperature.
- Clean salmon of all bones and skin and drain excess liquid. Crumble salmon into medium bowl and add all ingredients except lemon wedges. Mix together until crackers, seasonings and eggs make a meatloaf-like mixture.
- Form salmon mixture into flat patties approx. the size of a hamburger bun.
- Place patties into hot oil and fry until golden brown, then flip and repeat on the other side.
- Place cooked patties on to a paper towel to soak up the excess oil.
- Place a lemon wedge with each patty for garnish & flavor and serve them with your favorite side dish or on buns with tartar sauce & lettuce!
