Tamale Pie
- t/2-1 cup onion, chopped
- t/2-1 cup green bell pepper, chopped
- t/4 lb. Ground beef
- t6 oz. Tomato sauce
- t 1/2 cup frozen corn, defrosted
- t cup chopped olives
- t clove chopped garlic
- t teaspoon salt
- t-3 teaspoons chile powder
- tash pepper
- t 1/2 cup shredded cheddar cheese
- t/2 cup raisins (optional)
- Cornmeal topping:
- t/8 cup cornmeal
- t/4 teaspoon salt
- t cup water
- t/2 teaspoon butter
- Cook onion and pepper in oil on medium heat. Add meat until brown. Add rest of ingredients (except topping ingredients) and cook on medium heat 20-25 minutes. Put in casserole dish and add cheese on top. Place casserole dish in oven at 375 and cook for 40 minutes.
- Cook cornmeal, salt, water over low heat until thick. Add butter and stir. Immediately spread across top of meat mixture. (If you let it cool at all, it is very difficult to spread.)
- Serve with hot tortillas and butter.
