Easy Refrigerator Rolls
- 3/4 c. sugar
- 1 c. solid vegetable shortening
- 2 tsp. salt
- 1 c. boiling water
- 2 eggs, beaten
- 1 pkg. yeast
- 1 c. lukewarm water
- 6 c. all-purpose flour
- melted butter, cooled
- Place sugar, shortening and salt in large bowl.
- Pour boiling water over sugar mixture.
- Stir until dissolved.
- Cool to lukewarm and stir in eggs.
- Sprinkle yeast over lukewarm water.
- Let stand for 5 minutes.
- Stir well, add to sugar mixture.
- Add flour and mix well with a wooden spoon.
- Cover with foil and place in refrigerator for 2 hours or longer.
- Roll out on floured surface into rectangle, brush with melted butter.*
- Roll up as for jelly roll, cut into 1-inch slices.
- Place in greased muffin cups.
- Let rise 2 hours or until double in bulk.
- Bake in 400u0b0 oven for 15 minutes.
