Molasses Cookies
- 3/4 cup butter, melted or shortening
- 1 cup dark brown sugar
- 1 egg
- 1/4 cup molasses
- 1/2 tsp salt
- 2 cups all-purpose flout
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp ground ginger
- 1 tsp ground cloves
- Raw sugar for rolling cookies
- 1. Beat sugar into melted butter until fluffy.
- 2. Slowly add sugar and beat until fluffy.
- 3. Beat in egg, molasses and salt.
- 4. Sift together dry ingredients.
- 5. Slowly beat dry ingredients into the egg mixture until well combined.
- 6. Chill for at least 1-2 hours.
- 7. Preheat oven to 375 F.
- 8. Roll chilled cookie dough into small walnut-sized balls. Roll each ball in raw sugar.
- 9. Place on lightly greased or nonstick cookie sheet about 3 inches apart.
- 10. Bake about 8-10 minutes, until set and just beginning to brown on edges. DO NOT OVERBAKE or they will be very hard when cooled.
- 11. Cool 2-3 minutes on cookie sheet, then transfer to a wire rack to cool completely.
