Linguine With Mint
- 3 TB. sweet butter
- 2 cloves garlic - crushed
- 1/2 lb. sweet Italian Sausage
- 1/2 cup dry white wine
- 1 cup fresh mint, chopped
- 1 tsp dried oregano
- 1 lb. linguine
- 3 tb. salt
- fennel seed
- lemon
- parsley
- In medium skillet, melt the butter, add the crushed garlic and saute until golden.
- Remove the sausage meat from the casing, crumble and place in skillet. Saute until the meat is browned.
- Remove the garlic, add the wine, mint and oregano. Mix well.
- cover and simmer 6-7 minutes. Turn off the flame and let stand. Cook the linguine in salted boiling water.
- Drain pasta and place in large bowl. Add the sauce and toss well. Sprinkle with parsley.
- Serve immediately.
- (Fennel seed and lemon are optional.)
