Whole Wheat Carrot-Banana Bread
- 1/2 c. margarine or butter
- 1 c. packed brown sugar
- 2 eggs
- 1 c. all-purpose flour
- 1 c. whole wheat flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1 c. mashed ripe banana
- 1 c. finely shredded carrots
- 1/2 c. chopped nuts
- In a mixer bowl, beat margarine for 30 seconds.
- Add sugar; beat until fluffy.
- Beat in eggs.
- Combine flours, soda, baking powder, salt and cinnamon.
- Add dry ingredients and banana alternately to butter mixture, beating after each addition.
- Fold in carrots and nuts.
- Pour into two greased loaf pans.
- Bake in 350u0b0 oven for 40 to 50 minutes.
- Makes 2 loaves.
- Yields 15 servings each.
