Ann'S Salmon Bisque
- 4 Tbsp. butter
- 1 medium onion, sliced
- 1 stalk celery, diced
- 2 Tbsp. flour
- 2 tsp. paprika
- 1 c. water
- 1 chicken flavor bouillon cube
- dash of salt
- 1 tsp. fresh dill weed, snipped
- 1 can salmon, drained and coarsely flaked
- 2 c. half and half
- 2 Tbsp. sherry
- celery leaves (garnish)
- In pot, melt butter and saute onion and celery until tender, stirring occasionally.
- Stir in flour and paprika and cook for 1 minute.
- Stir in water, salt, dill weed and bouillon over medium heat.
- Cook, stirring constantly, until mixture thickens and is smooth.
- Remove from heat and fold in salmon.
- Return mixture to heat; stir in half and half and add sherry.
- Heat bisque until hot.
- Before serving, garnish with celery leaves.
