Paleo Diet, Hearty, Spicy Chicken Soup
- 1 pound of chicken breast - boneless, skinless
- 1 tablespoon of Extra Vrigin Olive Oil
- 2 tablespoon of Mrs. Dash salt free seasoning
- 1 tablespoon of Cumin
- 2 tablespoon of Sea Salt
- 1 tablespoon of Black Pepper
- 24 ounces of Chicken broth (salt free)
- ~128 ounces of Spring Water
- 1 Bok Choi
- 1 Green Tomato
- 4 Plum Tomatos
- 2 Brocoli Crowns
- 1 cup of Green Beans, sliced and diced
- 1 small Pumpkin or similar squash, rinded, seeded and chopped to squares.
- 1 large Yautia, peeled and chopped into squares
- 2 Jalapeno peppers, sliced
- 3 Chipolte peppers, whole
- If you can't find a Yautia, a sweet potato or yam is also fine.
- Cut the chicken breasts into 4ths or 5ths depending on size.
- In a large soup pot, begin by sauteing the chicken, spices and peppers in the olive oil. Do this until the chicken is browned and cooked.
- Next add the broth and fill the pot about half way. Bring the heat up to 'high'.
- Chop and add the vegetables. The tomatos can be cut into large sections, while the squash and Yautia should be diced into bite sized chunks. It's ok for the vegetables to be a little large - it's more hearty that way.
- Chop the bottom of the Bok Choi off and add it to the soup whole, so that the individual leaves come apart.
- Finally, add water to fill the pot and bring to a boil. Add salt to taste, but for a true Paleo meal, eliminate the salt entirely.
- Once the soup has boiled, simmer for 1-4 hours to enrich the flavors. Serve hot with a side of fruit for a hearty, healthy meal.
