Nebraska City Cake

  1. Preheat oven to 350'. Butter a 9X13 pan. Soak raisins in the Jack for 1/2 hour. Cream shortening and sugar. Add eggs. Mix well. Add the flour mixed with the salt, soda, cinnamon & nutmeg. Mix well. Stir in the apples, raisins, Jack and pecans. Pour into pan and bake for 50 to 60 minutes. Remove. Let cool 5 minutes
  2. While cake is baking over low heat melt butter, Gradually stir in flour and sugars. Stir in cream. Cook until thick. Stir in Jack.
  3. When cake has cooled about 5 min. pierce cake all over with a fork. Pour warm sauce over cake.
  4. Delicious the next day. Microwave individual servings.
