Nebraska City Cake
- Cake:
- 1/2 c solid shortening
- 2 c. sugar
- 2 eggs
- 2 c. all purpose flour
- 1 t. baking soda
- 1 t. salt
- 2 t. cinnamon
- 1 t. nutmeg
- 4 cups diced apples (about 5)
- 1 c. pecans, toasted and chopped
- 1/4 c. Jack Daniels
- 1/2 c. raisins
- Glaze:
- 8 T. butter (1 stick)
- 2 T. flour
- 1/2 c. granulated sugar
- 1/2 c packed brown sugar
- 1/2 c. half and half
- 1/4 c. Jack Daniels
- Preheat oven to 350'. Butter a 9X13 pan. Soak raisins in the Jack for 1/2 hour. Cream shortening and sugar. Add eggs. Mix well. Add the flour mixed with the salt, soda, cinnamon & nutmeg. Mix well. Stir in the apples, raisins, Jack and pecans. Pour into pan and bake for 50 to 60 minutes. Remove. Let cool 5 minutes
- While cake is baking over low heat melt butter, Gradually stir in flour and sugars. Stir in cream. Cook until thick. Stir in Jack.
- When cake has cooled about 5 min. pierce cake all over with a fork. Pour warm sauce over cake.
- Delicious the next day. Microwave individual servings.
