Lamb Spinach Feta Casserole
- 1 tbsp olive oil
- 1 medium onion
- 2 cloves garlic
- 1/2 lb ground lamb
- 1.5 tbsp dried oregano
- 1/2 tbsp dried thyme
- 1/4 tsp crushed red pepper
- Few pinches nutmeg
- salt & pepper
- 1/4 cup white wine
- 1/4 cup chicken stock
- zest & juice of 1/2 lge lemon
- 1/2 lb whole wheat fusilli cooked and drained
- 16 oz pkg chopped frozen spinach, well drained
- 1 egg lightly beaten
- 2/3 cup grated feta
- 1/3 cup finely grated parmesan
- 1/4 cup whole wheat bread crumbs
- Olive oil cooking spray
- Preheat oven to 350 F.
- 1. Soften onion and garlic over medium heat.
- 2. Add lamb, brown on high heat.
- 3. Add oregano, thyme, red pepper and salt & pepper to taste and sautee for 1 minute.
- 4. Add white wine until liquid evaporates.
- 5. Take off heat and mix in nutmeg, lemon zest and juice, spinach, pasta and feta. Adjust seasonings.
- 6. Fold into buttered round casserole dish. top with bread crumbs and then parmesan and spray with olive oil. Bake for 30 minutes uncovered.
