Steak Frites By Jimmy C
- Steak (2-8z Rib Eyes, Filet Mignon, or NY Strip
- 1/2 tsp Hickory Salt
- 1/4 tsp chipotle chile powder
- 1 tsp finely chopped cilantro or flat leaf parsley
- 2 tbsp butter
- 2 tsp dry mustard powder
- 1 generous tsp Dijon mustard
- olive oil
- black pepper
- Idaho russet potatoes
- salt
- sage or rosemary or thyme
- rub steaks with hickory salt, chipotle powder, and cilantro or parsley. refrigerate uncovered, for at least an hour, or up to 8 hours
- For the Frites:
- In a bowl, soak potatoes in cold, lightly salted water for 1 hour.
- Preheat over to 400 degrees
- drain potatoes and pat dry
- spay baking sheet, spread potatoes on single layer, dribble w/olive oil and salt (mix in herbs if desired), salt to desired test
- bake for 45-50 minutes, stirring midway
