Steak Frites By Jimmy C

  1. rub steaks with hickory salt, chipotle powder, and cilantro or parsley. refrigerate uncovered, for at least an hour, or up to 8 hours
  2. For the Frites:
  3. In a bowl, soak potatoes in cold, lightly salted water for 1 hour.
  4. Preheat over to 400 degrees
  5. drain potatoes and pat dry
  6. spay baking sheet, spread potatoes on single layer, dribble w/olive oil and salt (mix in herbs if desired), salt to desired test
  7. bake for 45-50 minutes, stirring midway

filet mignon, hickory salt, chile powder, cilantro, butter, mustard powder, generous, olive oil, black pepper, russet potatoes, salt, sage
