Autumn Oatmeal

  1. Preheat oven to 350 degrees
  2. Spray an 8 x 8 square baking dish.
  3. Place water in medium saucepan and bring to boil.
  4. Stir in oats and simmer, uncovered for 5 min.
  5. In a small bowl, whisk together milk and egg substitue; set aside.
  6. Add brown sugar, baking powder, cinnamon, nutmeg and salt to the oats; stir well.
  7. Blend in milk mixture and dried fruit.
  8. Pour into prepared dish.
  9. Bake, uncovered, 30-35 min.
  10. Allow to cool for 15-25 min before serving.
  11. Add a dollop of yogurt and sprinkle with nuts.
  12. (without yogurt 105 calories per serving)
  13. (with yougart 142 calories per serving)
