Sundried Tomato Pasta With Shrimp
- 1 lb. of frozen cooked shrimp
- 1 onion, chopped
- 1 red pepper, chopped
- 1 cup of carrots, chopped
- 1 lb. of farfalle pasta
- 1/2 cup of sun-dried tomatoes
- 2 tbsp. capers
- 3-4 heaping tbsp of sun-dried tomato pesto sauce (trader joes brand is great)
- salt and pepper to taste
- 2 tbsp extra virgin olive oil
- In a large skillet, heat olive oil over medium heat. Saute chopped onions, red pepper, and carrots until tender. Season with salt and pepper. Remove tails from shrimp and add to pan. Add sun dried tomatoes and capers, mixing all ingredients together. Add the sun-dried tomato sauce to pan. Let cook over low heat so that sauce coats all ingredients. In a large pot, cook farfalle pasta until done. Add to skillet and toss.
