No Bake Fruitcake
- 1 (13 1/2 oz.) pkg. graham cracker crumbs
- 2 tsp. grated orange rind
- 1 tsp. grated lemon rind
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1/8 tsp. ground allspice
- 1/8 tsp. ground ginger
- 1 (8 oz.) pkg. chopped dates
- 1 (8 oz.) jar mixed candied fruit
- 1 c. chopped walnuts
- 1 c. golden seedless raisins
- 1/2 c. orange juice
- 1/2 c. honey
- 2 Tbsp. lemon juice
- In large bowl thoroughly combine first 7 ingredients, then stir in next 4 ingredients.
- Add to graham cracker mixture and blend thoroughly.
- Pack firmly into 8 1/2 x 4 1/2 x 2 1/2-inch aluminum foil pan.
- Cover and refrigerate at least 2 days.
- Let stand about 2 hours at room temperature before serving.
- Makes 1 (8 ounce) loaf.
