Sweet And Sour Chicken
- Olive oil for browning chicken and vegetables.
- 5 boneless breasts of chicken, sliced thin
- 2 medium green peppers
- 3 small red peppers
- 1 large sweet onion
- 3 cloves garlic, minced
- 2 small zucchini, sliced thin
- 1 can pineapple chunks in juice
- 1 orange
- 1/4 cup whole berry cranberry sauce
- 3 T soy sauce
- 1/2 cup sugar or Splenda
- 1/3 cup red wine vinegar
- 1 teaspoon ground ginger
- 4 cups cooked brown rice
- Peel and cut orange. Add to pineapple and juice. Slice onions, zucchini and peppers.
- Brown chicken in batches until cooked through. Reserve in large bowl. Deglaze pan with juice drained from pineapple orange mixture. Add fruit, soy sauce, vinegar, sugar/Splenda, ginger and cranberry sauce. Bring to boil and allow to reduce slightly. Pour sauce over the chicken.
- Rinse pan. Saute onions and garlic. Add zucchini and continue to cook until onions are translucent. Remove from pan. Saute peppers. Add onion mixture and chicken with sauce. Allow to meld for a few minutes.
- Serve over rice.
