Tangy Lemon Squares
- CRUST:
- 1 Cup Butter (soft)
- 1/2 Cup Powdered Sugar
- 2 Cup Flour
- FILLING:
- 4 Eggs
- 2 Cups Sugar
- 1/3 Cups Flour
- 1/3 Cups Lemon Juice (fresh)
- 1 Teaspoon Baking Powder
- 1/4 Teaspoon Salt
- 1 Tablespoon Grated Lemon Peel
- Preheat oven to 350 degrees
- CRUST:
- Beat the butter and powdered sugar until well blended.
- Add the flour and mix well.
- Press this onto the bottom of a well-greased 9 x 13 inch pan.
- Bake for 20 minutes
- FILLING:
- Meanwhile, beat eggs until light.
- Add sugar and continue to whisk while adding the rest of the ingredients.
- Pour this "custard" over the crust.
- Return to the oven and bake for 25 to 30 minutes until golden and custard is set.
- Cool on wire rack and cut into squares.
- Sprinkle with powdered sugar before serving.
