Healthier Oatmeal Muffins
- 2 cups rolled oats
- 2 cups buttermilk
- 2 large eggs
- 1 cup packed brown sugar
- 1/2 cup expeller pressed canola oil
- 1 1/2 cup applesauce
- 1/4 wheat germ
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 tsp. salt
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 cup dried cranberries, raisins, currants, chopped apricots or other dried fruit, or fruit and chopped nut combination (optional).
- Preheat oven to 400F.
- In large bowl, combine buttermilk and oats. Let stand while measuring other ingredients. In another bowl, whisk together eggs, sugar, oil, applesauce and wheat germ. Sift together flours, salt, baking soda, baking powder. Now add the wet ingredients to the buttermilk oat mixture. Stir to combine, then add the flour mixture and stir until just combined. Gently fold in the cranberries or other add-ins.
- Divide batter among prepared muffin tins. Bake until golden and tester comes out clean, about 25 minutes.
