Chile Cheese Casserole
- 1 1/2 c. fat-free cottage cheese or lite Ricotta cheese
- 1 c. (4 oz.) fat-free Cheddar cheese, shredded
- 1 (4 oz.) can chopped green chiles, drained
- 1/2 c. cholesterol-free egg product or egg whites
- 1/4 c. chopped green onions
- 4 (6-inch) corn tortillas
- vegetable cooking spray
- 1/4 c. chopped green pepper
- 1 clove garlic, minced
- 2 (16 oz.) cans red kidney beans, drained and rinsed
- 1 (14 1/2 oz.) can (no salt added) whole tomatoes (with liquid), chopped
- 1 (8 oz.) can (no salt added) tomato sauce
- 2 tsp. chili powder
- 1/2 c. (2 oz.) shredded fat-free Cheddar cheese
- 2 Tbsp. chopped green onion
- Combine first 5 ingredients in a medium bowl; stir well.
- Set aside.
