Grits And Cheese Casserole
- 4 c. hot tap water
- 1 c. quick grits
- 1 tsp. salt
- 6 Tbsp. butter, sliced
- 8 oz. pasteurized processed cheese (like Velveeta), cut into cubes
- 2 eggs, beaten
- milk
- 1/2 tsp. garlic powder
- dash of Tabasco
- 2 Tbsp. butter
- paprika
- In a 3-quart casserole place water, grits and salt.
- Microwave at High 10 to 12 minutes, uncovered, stirring after five minutes. Add butter and cheese to grits.
- Mix well.
- Microwave on High 1 to 2 minutes, until butter and cheese are melted.
- Stir well.
- In a 1-cup measure, beat eggs and fill with milk to the 1-cup line. Add garlic powder and Tabasco.
- Quickly stir into grits.
- Pour mixture into a well-greased 12 x 8 x 2-inch casserole dish.
- Dot top with butter.
- Sprinkle with paprika.
- Microwave on High 17 to 19 minutes, rotating dish one-half turn after 9 minutes, until set.
- Serves 8 to 10.
