Bad Ass Bhindi Masala
- -Okra (1 lb)
- -Cumin Seeds (3 pinches)
- -Olive oil or Ghee (3 Tbs)
- -1 Onion (finely chopped)
- -1/2 to 1 Tomato (finely chopped)
- -Garlic (2 cloves)
- -Ginger (equal volume to garlic)
- -Thai chili (1-2)
- -Tumeric (1/4 tsp)
- -Cumin powder(1/2 tsp)
- -Garam Masala (1/2 tsp)
- -Coriander powder (1/2 tsp)
- -Salt
- -Fresh cilantro (chopped)
- Prep work:
- - Chop the onion finely
- - Chop the tomato finely
- - Pulverize: (Garlic/Ginger/chili)
- - Remove the tops of the okra
- - Chop the okra in to 1/2 inch discs
- Initial okra cooking:
- This step is to keep the okra from becoming sticky.
- - Heat 2 Tbs of oil pan on Med-High or High
- - When oil starts to smoke, add 2 pinches of cumin seeds
- - When cumin seeds begin to "pop", add okra
- - brown okra on both sides and remove from heat (1-2 minutes)
- Masala Preparation:
- Add remaining oil, repeat step with remaining cumin seeds
- - Add chopped onion, cook until translucent (1 min)
- - Add chopped tomato
- - Add remaining ingredients
- - Lower heat
- - Cook until the oil "separates" from the paste (1 min)
- - Add the okra back to the pan, mix well (30 sec)
- - Remove from heat, salt to tasted and finish with chopped cilantro
