Bad Ass Bhindi Masala

  1. Prep work:
  2. - Chop the onion finely
  3. - Chop the tomato finely
  4. - Pulverize: (Garlic/Ginger/chili)
  5. - Remove the tops of the okra
  6. - Chop the okra in to 1/2 inch discs
  7. Initial okra cooking:
  8. This step is to keep the okra from becoming sticky.
  9. - Heat 2 Tbs of oil pan on Med-High or High
  10. - When oil starts to smoke, add 2 pinches of cumin seeds
  11. - When cumin seeds begin to "pop", add okra
  12. - brown okra on both sides and remove from heat (1-2 minutes)
  13. Masala Preparation:
  14. Add remaining oil, repeat step with remaining cumin seeds
  15. - Add chopped onion, cook until translucent (1 min)
  16. - Add chopped tomato
  17. - Add remaining ingredients
  18. - Lower heat
  19. - Cook until the oil "separates" from the paste (1 min)
  20. - Add the okra back to the pan, mix well (30 sec)
  21. - Remove from heat, salt to tasted and finish with chopped cilantro
